Recipe: Banana walnut muffins

These muffins are super easy to make and are higher in protein and fibre, and lower in sugar/carbohydrates than most muffins.

Ingredients:

  • 1 cup self raising flour
  • ½ cup walnut flour
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • 1 ripe or overripe banana, mashed
  • 1 egg, lightly beaten
  • ¾ cup milk
  • ¼ cup walnut oil (or substitute any mild-flavoured vegetable oil, such as rice bran oil)

Method:

  1. Pre-heat oven to 180 degrees C and grease a 12-muffin tin. 
  2. Mix the dry ingredients in a bowl and make a well in the centre.
  3. Add the remaining ingredients to the centre of the bowl, stirring the wet ingredients together before incorporating all of the dry ingredients. Don’t over mix. 
  4. Spoon the mixture into the muffin pan.
  5. Bake for 20 minutes until browned then remove muffins from the tin and onto a rack to cool. 

Makes 12 small muffins or 9 medium-sized muffins. We usually double the recipe and make 18 muffins.
