These muffins are super easy to make and are higher in protein and fibre, and lower in sugar/carbohydrates than most muffins.
Ingredients:
- 1 cup self raising flour
- ½ cup walnut flour
- ¼ cup sugar
- 1 teaspoon cinnamon
- 1 ripe or overripe banana, mashed
- 1 egg, lightly beaten
- ¾ cup milk
- ¼ cup walnut oil (or substitute any mild-flavoured vegetable oil, such as rice bran oil)
Method:
- Pre-heat oven to 180 degrees C and grease a 12-muffin tin.
- Mix the dry ingredients in a bowl and make a well in the centre.
- Add the remaining ingredients to the centre of the bowl, stirring the wet ingredients together before incorporating all of the dry ingredients. Don’t over mix.
- Spoon the mixture into the muffin pan.
- Bake for 20 minutes until browned then remove muffins from the tin and onto a rack to cool.
Makes 12 small muffins or 9 medium-sized muffins. We usually double the recipe and make 18 muffins.
