Our walnut granola is so popular we thought we’d share the recipe so you can make your own granola at home. It’s delicious as a breakfast cereal, or as a topping for fruit and yoghurt or dessert. Enjoy!
Coaldale Walnut Granola recipe
Ingredients:
4 cups rolled oats
2 cups Coaldale walnut kernel pieces
3 tablespoons pepitas (pumpkin seeds)
5 tablespoons sesame seeds
3 tablespoons sunflower seeds
1/3 cup water
1/3 cup white sugar
1/3 cup maple syrup
1 tablespoon honey
1 tablespoon vegetable oil
Method:
Preheat oven to 150 degrees celcius.
Mix the dry ingredients in a large bowl. In a saucepan over low heat, combine the water, sugar, maple syrup and honey. Stir until sugar has dissolved. Add vegetable oil to the saucepan and pour over the dry ingredients. Stir until all the dry ingredients are coated with the syrup mixture.
Grease two oven trays, or line with baking paper. Spread granola evenly over the trays.
Bake for 25 minutes or until brown. Leave on the trays to cool, then store in a airtight jar.
The recipe can be varied to your taste – you can substitute other dry ingredients as long as the overall volume stays about the same. You could try adding spices, or vanilla paste, or substitute other sweeteners for the maple syrup. If you want to add any dried fruit, mix it through after cooking.
