These chunky , cookie-like biscuits have been so popular that we’ve had several requests for the recipe. So here it is:
1/2 cup chopped dates
1 cup wholemeal flour
1/4 cup self raising flour
2 tbs brown sugar
1 tsp baking powder
3/4 cup chopped walnuts
Preheat oven to 160 degrees Celsius.
Place dates and butter in a saucepan and cook gently until the dates have softened. Cool slightly.
Combine flour, baking powder, sugar and walnuts in a large bowl.
Add egg and cooled date mixture and stir until all flour is incorporated.
Roll spoonfuls of dough and place on baking tray, flattening slightly for even cooking.
Bake for around 15 minutes or until browned and risen.
