These chewy cookies are made with walnut flour and melted chocolate for a fudgy, gluten free treat. Makes around 20 cookies.
Ingredients:
- 1 1/2 cups walnut flour
- 1/4 cup corn flour
- 1/2 cup cocoa powder
- 3/4 cup sugar
- 150g dark chocolate
- 180g butter
- 3 eggs
Method:
- Preheat oven to 180 degrees C (160 fan forced).
- Combine dry ingredients in a large mixing bowl.
- Melt butter and chocolate in a glass bowl or jug on the lowest temperature setting in the microwave. Check and stir part way.
- Add chocolate mixture to dry ingredients with the lightly beaten eggs and combine well.
- Scoop rounded tablespoons of mixture onto greased and lined baking trays, allowing room for spreading. Press to flatten slightly. If the mixture seems too runny, chill slightly in the fridge before making the cookies.
- Bake for around 15 minutes. Cool slightly on the trays before transferring to a rack to cool completely.
