Thank you to Madeleine, who came along to our open weekend and shared with us this exquisite recipe for vegetarian walnut ‘sausage’ rolls. These were a hit with our whole family – kids and meat-lovers included! They are super-simple to make, hold together really well and are surprisingly filling. And incredibly yummy! Well worth a try.
Ingredients
1 brown onion (approx. 180g)
1 tbsp dried oregano
100g walnut kernel (you can buy our walnuts in 200g walnut kernel packs, or 3kg bulk boxes)
90g rolled oats
3 eggs
150g feta cheese, cut into pieces
1tbsp tamari or soy sauce
50g breadcrumbs
3 sheets ready-made puff pastry, slightly thawed
plain flour, for dusting
milk, for brushing
sesame or poppy seeds, for sprinkling (optional)
Method
- Preheat oven to 200°C. Line a baking tray with baking paper and set aside.
- Chop onion and place in a food processor.
- Add dried oregano, walnuts and rolled oats and whiz then scrape down the sides.
- Add eggs, feta cheese, tamari or soy sauce and breadcrumbs and combine.
- Cut puff pastry sheets into halves and transfer to silicone bread mat or floured work surface.
- Place one sixth of the mixture onto the long edge of 1 pastry sheet half and roll. Cut into four equal portions and place onto prepared baking tray. Brush pastry with milk and sprinkle with sesame seeds (optional). Repeat process with remaining mix and pastry sheet halves until all used.
- Bake for 20 minutes (200°C) until crisp and golden. Allow to cool slightly before serving warm, with your favourite sauce or relish (try pickled walnut ketchup).

Ordered 10 x 500g packets of Walnut Kernels, tongue in cheek, because past orders of so called fresh walnut kernels from other suppliers had left me extremely disappointed because they were far from fresh and had an extremely unpalatable and horrible rancid bitter taste!
Well what a difference an honest fresh supplier of walnut kernels makes! Even after 12 months from receiving them, some of the packets are still as fresh and pleasant to eat as they were when I received them. Just goes to show, never trust the freshness of mass suppliers like JC’s for their so called freshness! Most of them are stale as!!!

We visited the Coaldale walnut stall at the Crave Harvest festival in Richmond. The pickled walnuts were very tasty & quite an unique product.

It was a great experience to pick fresh walnuts from Coaldale Walnuts Farm. Beautiful farm, fresh and delicious walnuts, and kind staff. It was a perfect family time in beautiful Tasmanian autumn.
Just walking around the walnut trees was peaceful and finding large walnuts from branches was so much fun.
Also we enjoyed the coffee and dessert from a coffee van. Lastly their pickled walnut was so delicious when I tasted it, so purchased a jar and I am enjoying it at home. I will definitely go to the open farm days again!

Beautiful orchard just outside Richmond. We were lucky to get tickets to the Open Farm Day 6 May 2023 to pick our own walnuts. The event was superbly organised and even had hot food and drinks for sale. The fresh walnuts are fabulous, just hope we picked enough to last us until next year!
