Easy to make and packed with nutritious ingredients, these individual baked oats are a great way to start the day. You can even make them the night before so they are ready to eat for busy mornings.
Note: Makes 4 serves
Ingredients:
- 2 eggs
- 1 cup milk
- 1 tbs honey (optional)
- 1 tsp baking powder
- 1 cup rolled oats (100g)
- ¼ cup walnut flour
- 1 banana, mashed
- 60g blueberries (fresh or frozen)
Method:
- Pre-heat oven to 180 degrees C (160 degrees C fan-forced). Grease 4 ramekins and place on a baking tray.
- Whisk eggs, milk, baking powder and honey (if using) together in a mixing bowl.
- Stir in oats, walnut flour, banana and berries.
- Divide mixture evenly between the ramekins and bake for 30-35 minutes.
- Cool before serving or refrigerate to eat later (serve cold or reheat in the microwave).
