Recipe: Walnut, Banana and Blueberry Baked Oats

Easy to make and packed with nutritious ingredients, these individual baked oats are a great way to start the day. You can even make them the night before so they are ready to eat for busy mornings.

Note: Makes 4 serves

Ingredients:

  • 2 eggs 
  • 1 cup milk
  • 1 tbs honey (optional)
  • 1 tsp baking powder
  • 1 cup rolled oats (100g)
  • ¼ cup walnut flour
  • 1 banana, mashed
  • 60g blueberries (fresh or frozen)

Method:

  1. Pre-heat oven to 180 degrees C (160 degrees C fan-forced). Grease 4 ramekins and place on a baking tray. 
  2. Whisk eggs, milk, baking powder and honey (if using) together in a mixing bowl. 
  3. Stir in oats, walnut flour, banana and berries.
  4. Divide mixture evenly between the ramekins and bake for 30-35 minutes. 
  5. Cool before serving or refrigerate to eat later (serve cold or reheat in the microwave).
