A lightly spiced, gluten-free slice made with walnut flour and walnut oil for a rich, nutty flavour. Studded with chunks of apple (or pear), it has a gentle sweetness and a soft, tender crumb. Simple, wholesome, and perfect for an easy, everyday bake.
Ingredients:
- 1/4 cup walnut oil
- 2 eggs
- 1/2 cup sugar
- 1/3 cup water
- 1 1/2 cups walnut flour (170g)
- 1/4 cup corn flour
- 1 tsp baking powder
- 1/2 tsp mixed spice
- 2 small apples (or pears), cored and diced (we leave the skin on, but peel if you like)
Method:
- Pre-heat the over to 180 degrees celsius and line a square baking tin.
- Whisk the oil, eggs and sugar together in a medium sized bowl. Add the water.
- Add dry ingredients and mix to incorporate, then stir in the apple pieces.
- Transfer mixture to the prepared baking tin, then bake in the oven for 30 min, or until the top is browning and a skewer comes out cleanly.
- Allow to cool slightly in the tin and then transfer to a wire rack.
