An Apple walnut slice

Recipe: Apple and Walnut slice (gluten free)

A lightly spiced, gluten-free slice made with walnut flour and walnut oil for a rich, nutty flavour. Studded with chunks of apple (or pear), it has a gentle sweetness and a soft, tender crumb. Simple, wholesome, and perfect for an easy, everyday bake.

Ingredients:

  • 1/4 cup walnut oil
  • 2 eggs
  • 1/2 cup sugar
  • 1/3 cup water
  • 1 1/2 cups walnut flour (170g)
  • 1/4 cup corn flour
  • 1 tsp baking powder
  • 1/2 tsp mixed spice
  • 2 small apples (or pears), cored and diced (we leave the skin on, but peel if you like)

Method:

  1. Pre-heat the over to 180 degrees celsius and line a square baking tin.
  2. Whisk the oil, eggs and sugar together in a medium sized bowl. Add the water. 
  3. Add dry ingredients and mix to incorporate, then stir in the apple pieces.
  4. Transfer mixture to the prepared baking tin, then bake in the oven for 30 min, or until the top is browning and a skewer comes out cleanly. 
  5. Allow to cool slightly in the tin and then transfer to a wire rack.
