If your walnuts are in the shell, don’t shell them until you need to use them as they keep exceptionally well in their shells. Just store them somewhere cool and dry where they are safe from critters. They should keep more than 12 months (from harvest) like this.
Walnut kernel (the shelled walnut) is a shelf-stable dried product. Due to being high in healthy oils, it does need special care to stay at its freshest for an extended period of time. Walnut kernel will be fine stored in a cool, dry place out of direct sunlight for up to 12 months (from when it was packed) in an airtight container (or sealed packet).
The pantry is usually adequate unless you’re in a hot or humid climate – but, to maintain optimum freshness, or if you’re in a warm climate, we recommend keeping kernel in the fridge or freezer (just bring back to room temperature before eating for the best flavour).
If you purchase our loose walnut kernel box, we definitely recommend packing it into a sealed packet or container, especially if you plan on keeping it for several months.
