A ceramic baking dish with shredded cooked red cabbage inside

Spice up Christmas lunch with a red cabbage and pickled walnut side

The perfect accompaniment to roast turkey, this unique side-dish will wow your Christmas guests. The vinegar is beautifully balanced with sweetness and the spices are wonderfully festive.

The below quantities serve around 4 people (as a side-dish).

Ingredients:

  • 250g red cabbage, shredded
  • 1/2 brown onion, diced
  • 1 small granny smith apple, peeled, cored and chopped
  • 4 pickled walnuts, chopped very finely
  • 1/2 cup pickled walnut liquid from the jar

Method:

  1. Pre-heat the oven to 130 degrees Celsius.
  2. Sauté onion in a pan until softened, then transfer to a medium casserole dish with a lid.
  3. Add all other ingredients to the casserole dish and stir to combine.
  4. Cover and cook for an hour.
  5. Check and stir halfway through cooking time, adding more liquid if too dry.
