Once the walnut is out of its shell, it does need a little more care to stay fresh, but as long as you take these steps, it’ll stay beautifully fresh for months and months. At the very least, walnut kernel should be kept in a cool, dry place out of direct sunlight, in an airtight container (or sealed packet) and under these conditions, it will last up to 12 months. To maintain optimal freshness, we recommend keeping kernel in the fridge or freezer (just bring back to room temperature before eating for the best flavour).
Weight comparison
In-shell walnuts typically contain around 40% kernel, though this can vary depending on the walnut variety. While in-shell walnuts are cheaper per kilogram than shelled walnut kernels, you’re essentially paying for the shell, which makes up about 60% of the total weight. For example, in a 4kg bag of in-shell walnuts, you’ll get roughly 1.6kg of actual walnut kernel.
With shelled walnut kernels, you’re only paying for the walnut kernel itself, which reduces the overall weight and shipping costs. So for a 3kg box of walnut kernel, you are getting almost twice the kernel that you would get in a 4kg bag of in-shell walnuts.
Cost comparison
You can use the ratio of 40% kernel to 60% shell to work out the best value. Using our example above, a 4kg bag of in-shell walnuts will yield about 1.6kg of walnut kernel. If we compare this with a 3kg box of walnut kernel, (using 2024 pricing), the in-shell walnuts actually work out to be slightly more expensive per 100g of kernel:
- In-shell walnuts: $3.625 per 100g of walnut kernel.
- Shelled walnuts: $3.567 per 100g of walnut kernel
In-shell walnuts are also much more expensive to post than kernel, as they are bulky and you are paying to ship the shells as well!
So walnut kernel can be a better value option, depending on the pack size you want to buy.
